A comforting, delicious and quick pork tomato stew.

Ingredients
300 gm ground pork
2 celery stalks - diced
1 large onion - diced (red or white onion is fine)
2 tomatoes - roughly chopped
1 can of Hunt's Diced Tomatoes (Roasted Garlic flavour - undrained)
4 cloves of garlic - roughly chopped
Water or low sodium chicken stock (about 1 cup or enough to cover ingredients)
For Marinade
1 tbsp olive oil
¾ tsp salt
A few shakes of coarse ground pepper
For flavouring and garnishing (Use amount to taste)
Dried basil
Dried Oregano
Coarse ground black pepper
Salt
For Frying
1 tbsp olive oil
Instructions
Marinate the ground pork and let it sit while you prepare your other ingredients.
Heat up 1 tbsp of olive oil in a medium-sized pot. Add onions and fry till soft and transparent. Then add in garlic and stir-fry for awhile till fragrant. Do not brown the garlic or it will be bitter.
Add the ground pork. Using medium heat and a deft hand, sauté and stir the pork with a spatula so that it does not clump. Do this until it is nicely separated.
Add in carrots and celery and continue to cook. Sprinkle the dried herbs over the stew.
Pour in the Hunt's diced tomatoes followed by water/stock. Stir gently to mix everything well. Bring to a boil. Then reduce heat, cover with lid and simmer over a small flame for about 10-15 minutes until the ingredients have softened. Garnish with dried herbs and serve hot.
